MON MAY 19 - VICTORIA DAY - NO SCHOOL
TUE MAY 20 - creme brulee
WED MAY 21- bouche de noel
THU MAY 22 - souffle
FRI MAY 23 - catch up day
MON MAY 26 - garden and planning/ordering - sponge cake, fondant - SIMPLE!!!
TUE MAY 27 - bake cakes
WED MAY 28 - FIELD TRIP
THU MAY 29 - decorate
FRI MAY 30 - decorate

- a flourless cake or torte - 1 day
- a decorated Bouche de Noel - 2 days
- an elaborate choux product – i.e. croquembouche or eclairs & cream puffs - 2 days
- a crème brûlée or panna cotta - 2 days
- a soufflé - 1 day
- your final project – “wedding” or special occasion cake – start gathering ideas - this project will take you 3-5 days to complete
- total time will be 2.5 weeks - with time for blogs and reflections students must be done by October 31 - students that work efficiently will have time to either redo a lab that was less than successful or complete something for extra credit (please note I will also be away on October 25th)
- BONUS LAB - MAKE MACARONS!
- Some of these labs will take more than one class to complete and require you to plan your time accordingly.
- ALL LABS MUST BE DISCUSSED WITH ME BEFORE I WILL ORDER ANY INGREDIENTS.
- Presentation of these labs is also important.
- You may wish to take advantage of RTI and FLEX time for some of these labs.
